My Family Fast Healthy Cake: This is all I had left...I added Wheatgerm and Flaxseed meal, no one notice!
1 cup All-Bran
1 cup raw suger (or brown)
1 cup sultana’s (or fruit medley/ Dates what ever is your favourite)
1 Cup soy milk (or milk of your choice)
Mix together and soak over night or for several hours.
Add 1 cup SR flour (wholemeal or flour of your choice)
And that is it! Mix, cook in moderate oven in muffin tin or cake tin. Muffins take about 25mins, Cake about 45mins.
Extras: if adding ¼ cup wheat germ and/ or flaxseed meal – cooking takes a bit longer and add extra milk if needed.
